Cooking the lobster gently in warm, emulsified butter keeps the meat incredibly tender while allowing the natural sweetness of the lobster to shine. Ingredients

  • 2 lobster tails (6–8 ounces each)
  • 1 cup unsalted butter (2 sticks), cut into pieces
  • 2 tablespoons water
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, finely minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)
  • Lemon wedges, for serving

Preparing the Lobster Tails

If using frozen lobster tails, allow them to thaw completely in the refrigerator before cooking. Once thawed, rinse and pat them dry with paper towels.

Using kitchen shears, carefully cut lengthwise down the top of each lobster shell, stopping just before the tail fin. Gently spread the shell open to expose the meat. Lift the lobster meat slightly out of the shell, keeping the end attached near the tail, and rest it on top of the shell. This step helps the lobster cook evenly and gives it an attractive presentation.

Pat the lobster meat dry again if needed, then lightly season with salt and freshly ground black pepper. Set aside while you prepare the butter poaching base.
