Magic Custard Cake
Magic Custard Cake is a unique dessert made from one simple batter that separates into three distinct layers as it bakes: a dense bottom layer, a creamy custard center, and a light sponge cake on top.
Ingredients
4 large eggs, separated and at room temperature
¾ cup (150 g) granulated sugar
½ cup (115 g) unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract
¾ cup (95 g) all-purpose flour
2 cups (480 ml) lukewarm milk
¼ teaspoon salt
Powdered sugar, for dusting
Instructions
Preheat the oven to 325°F (160°C). Grease and line an 8-inch (20 cm) square baking pan with parchment paper.
Separate the eggs. In a clean bowl, beat the egg whites until stiff peaks form. Set aside.
In another bowl, whisk the egg yolks with the sugar until pale and creamy.
Mix in the melted butter and vanilla extract.
